Expansion and experience are all part of Robbers Dog Distillers modus operandi as they continue to grow
“The original vision was simple: make really good booze to the best of our ability,” explains Robbers Dog owner Rob Davies as we chat in the cellar door. Purely focused on production at the beginning, Rob began experimenting with the space, opening a cellar door and introducing food, turning Robbers Dog into more than just a distillery.
“Robbers Dog evolved naturally into a destination. Somewhere people could experience the story behind the spirits.” Along with crafting premium spirits, Robbers Dog is also about “creating an experience grounded in community, character and place.”
Sitting at the intersection of the Adelaide Hills and the Barossa Valley, Rob believes Robbers Dog takes a little from both regions, and the intimate size of the venue allows visitors to chat one-on-one with Rob about everything from the distillation process to what pairs best with each spirit.
“Our tastings are designed to be personal and interactive, rather than transactional,” explains Rob. “There’s no fixed tasting menu. Guests can ask questions, compare flavours and explore what interests them most. By the end, visitors haven’t just sampled a set list – they’ve taken a journey that feels uniquely theirs. And that’s what sets it apart from a standard distillery visit.”
“Operating out of a former bank that was robbed three times tends to spark conversation,” Rob says with a laugh. “It turns out people enjoy drinking spirits in a building with a colourful criminal past.”
2026 is shaping up as a monumental year for Robbers Dog. Expansion plans include a new production and distillation space and a boutique bed and breakfast, giving punters the option to stay the night and make a weekend of their visit.
“We’re focused on growing Robbers Dog as an experience. It’s about improving visitor enjoyment, increasing capacity where needed and continuing to position Robbers Dog as a destination within Mount Pleasant and the wider region.”
