Owner Rob Davies opens up about his passions for spirits and the role sustainability plays at Robbers Dog Distillery
Tell us about the origins of Robbers Dog?
My passion for spirits started as a hobby. I did a lot of reading, bought a still and started experimenting. It wasn’t just the end product that fascinated me; it was the process. Eventually, the hobby became my job, and that’s how Robbers Dog was born.
What sets Robbers Dog apart from other local distilleries?
We make everything from scratch. Every spirit is created in-house, from the mashing and fermenting right through to distilling and bottling. For us, it’s about the craft, the flavour, and the satisfaction of knowing the spirit in your glass was born right here in Mount Pleasant.
Sustainability plays a major role in what you do. Why is it so important to you?
I love making spirits, but I want to make sure I’m doing it in a way that respects the environment and sets a standard for what small-batch businesses can achieve. It’s all about responsibility, crafting spirits with respect for the environment while proving that small-batch businesses can do their part.
If someone comes in with no idea where to start with your selection, where would you suggest they start to get the full Robbers Dog experience?
Tastings at Robbers Dog always kick off with a chat, not a paddle we push across the bar. We want to know what you like and build the experience around that. It’s about creating a tasting that’s yours. You get the conversation, the story behind each spirit and a bit of banter along the way.
What's next for Robbers Dog?
We aim to be a destination of choice. A place people want to come to, not just for the spirits, but for the experience, the community and the story. If people leave here thinking, “That was worth the trip,” then we’ve done our job.
